Mayonnaise with AOP Fourme d’AMBERT and sweet potatoes fries Print the recipe

Ingredients

  • 1 egg yolk
  • 1 tea spoon of mustard
  • 1 pinch of salt
  • 1 table spoon of lemon juice
  • 25 cl vegetable oil
  • 55 g of Fourme d’AMBERT
  • 2 sweet potatoes
  • 1 to 2 table spoon of olive oil
  • 2 pinches of salt
  • 1 tea spoon of smoked paprika

Instructions

  1. Preheat your oven at 180°. Cover your plate with a sheet of baking papper. Slice the sweet potatoes into French fries. Lay them on the baking sheet and take care that they do not touch each other. Drizzle with olive oil. Bake for 30 or 40 min.
  2.  Meanwhile, prepare the mayonnaise. For this, put the mustard, the egg yolk and the salt in a pitcher. Create the emulsion using a blender. As soon as the mayonnaise is ready, add the Fourme d’AMBERT cubs and blend it few seconds more. Place the mayonnaise in a container.
  3. As soon as the sweet potatoes leave the oven, sprinkle them with smoked paprika. Set directly with the AOP Fourme d’AMBERT mayonnaise.
